Not every table is available all of the time, and closing the whole venue is a blunt way to say so. A terrace that only works in the evening, a room being repainted, a station whose chef starts at six — each needs the same thing: that unit, out of play, for a while.
Hiding takes a unit off the board and out of the online booking flow. You choose whether it goes all day or only inside a daily window — a terrace that opens at 17:00, say — and the window may run past midnight if your night does.
You also choose WHO it hides from. Hide it from everyone, or from online guests only — which keeps the unit live for your own staff, so you can still seat a walk-in on the table you would rather the internet did not book.

Hiding controls what can be offered and booked going forward. Check the board for anything already on that unit before you hide it.
