Switch off “Guests choose their table” and the online booking page stops offering tables. The guest picks a date, a time and how many people are coming, and is told the venue will choose the table for them.
Nothing is left unassigned in the meantime. The best free table that fits the party is held for the booking, so availability stays exact and you can never be sold more eight o’clock bookings than you have tables. The booking arrives marked as held, and your team either confirms that table or moves the party somewhere better.

Can I switch it back on?
Yes, at any time, in the same place. Guests pick their own tables again from the next booking. Bookings that are still held stay held until your team confirms them.
